RECIPE: RAINBOW CHEESECAKE

Ingredients: 
   
 For the crust:1
  •  1/2 cups of graham cracker crumbs
  • 1/4 cup of granulated sugar
  • 6 tablespoons of unsalted butter, melted

For the filling:
  • 4 packages (8 oz each) of cream cheese, softened
  • 1 cup of granulated sugar
  • 4 large eggs
  • 1 teaspoon of vanilla extract
  • 1/4 cup of heavy cream
  • Gel food coloring in red, orange, yellow, green, blue, and purple


Instructions:
  • Preheat the oven to 325°F. Grease a 9-inch springform pan with cooking spray.
  • In a medium-sized bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared pan.
  • Bake the crust for 10 minutes or until lightly golden brown. Remove from the oven and let cool.
  • In a large mixing bowl, beat the cream cheese and sugar together until creamy and smooth. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and heavy cream.
  • Divide the mixture into six equal parts and place them in separate bowls. Add a different gel food coloring to each bowl and mix well until the desired color is achieved.
  • Pour the first color (red) over the crust and smooth it out with a spatula. Repeat with the remaining colors in the order of the rainbow: orange, yellow, green, blue, and purple. Make sure to smooth out each layer before adding the next.
  • Bake the cheesecake for 50-60 minutes or until the edges are set but the center is still slightly jiggly.
  • Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 30 minutes before removing it and letting it cool completely on a wire rack.
  • Cover the cheesecake with plastic wrap and chill in the refrigerator for at least 4 hours, or preferably overnight.
  • Once the cheesecake is chilled, remove it from the pan and slice it into wedges. Serve and enjoy your beautiful rainbow cheesecake!
