RECIPE: GRASSHOPPER BARS AKA CHOCOLATE MINT SLICES




Grasshopper Bars, also known as Chocolate Mint Slices, are a classic dessert that combines the irresistible flavors of chocolate and mint in a creamy, cool treat. These bars are perfect for any occasion, from summer picnics to winter holidays, and are sure to be a hit with anyone who loves chocolate and mint.


Ingredients: 

For the crust:
  • 1 1/2 cups chocolate wafer crumbs
  • 1/3 cup butter, melted
  • For the filling:3 cups powdered sugar
  • 1/2 cup butter, softened
  • 2 tbsp milk
  • 1 tsp peppermint extract
  • Green food coloring (optional)

For the topping:
  • 1 cup semisweet chocolate chips
  • 1/4 cup butter

Instructions:
  • Begin by preheating your oven to 350°F. Line a 9x13 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  • In a large mixing bowl, combine the chocolate wafer crumbs and melted butter. Mix until the crumbs are evenly coated.
  • Press the mixture into the bottom of the prepared baking pan, using your hands or the bottom of a measuring cup to create an even layer.
  • Bake the crust in the preheated oven for 10 minutes, or until set. Remove from the oven and let cool completely.
  • While the crust is cooling, make the filling. In a large mixing bowl, beat the softened butter until light and fluffy.
  • Gradually add the powdered sugar, milk, peppermint extract, and green food coloring (if using), and beat until the filling is smooth and creamy.
  • Spread the filling evenly over the cooled crust, using a spatula to smooth it out.
  • Place the pan in the refrigerator to chill for at least 30 minutes, or until the filling is firm.
  • In a small saucepan, melt the chocolate chips and butter over low heat, stirring constantly, until smooth and glossy.
  • Pour the melted chocolate over the chilled filling, spreading it evenly with a spatula.
  • Return the pan to the refrigerator and chill for another 30 minutes, or until the chocolate is set.
  • Once the chocolate has hardened, use the parchment overhang to lift the bars out of the pan. Cut them into squares or rectangles and serve chilled.
